 It has evolved, over the centuries, into a wide range of delicious dishes based on fresh and colorful ingredients from all over the country. Many people will be introduced to the wonders of Spanish food,  and marvel at the selection and flavors on offer.


 But Spanish cooking is much more than delicious tapas. From hearty stews to exquisite light meals, there is something to satisfy every palate in this vibrant country


 Many dishes today are prepared using the same cooking methods and ingredients as two or three hundred years ago. Like the Romans, the Arabs who colonized Spain and lived there for 800 years made remarkable contributions to Spanish cuisine, and their influence is evident in many recipes. Other dishes emerged from European and American influences and were adapted to Spanish tastes. There are a few things that still hold true: the food in Spain is fresh, plentiful and full of flavour, and the Spaniards love their food very much


 The two basic ingredients of Spanish food are olive oil and garlic. In fact, it is not uncommon for the only common ingredients used across the country to be garlic and olive oil. However, because Spain consists of distinct geographical regions inhabited by different ethnic and cultural groups, and because the weather varies from province to province, regional cuisines actually vary greatly.
